Pesto pancakes "Il tricolore"

When I receive an email saying "With Pancake Day just round the corner (March 4), get your apron at the ready and create a masterpiece in the kitchen with a helping hand from OXO. From sweet to savoury, we want to see your favourite Shrove Tuesday recipe", my heart sings with content. I love cooking and blogging challenges and assignments, and am happy to work with OXO.
As a materfamilias of the pancakes-loving bunch, I don't need an excuse to make a batch of pancakes. If anything, every Sunday is a pancake day in our family.
There's no such thing as traditional pesto pancakes, but I love playing with the ingredients, and I always have a jar or tub of fresh pesto in the fridge. I named my Pesto pancakes "Il tricolore" after the Italian flag, as they consist of three colours: green, white and red.




Pesto pancakes (makes 4)
Ingredients:
2 medium eggs
1 heaped tbsp of fresh pesto
4 tbsp of self-raising flour, heaped
50ml milk
butter, for greasing
150g mozzarella and sun-dried tomatoes salad



In a bowl mix the batter by beating the eggs with pesto, milk and flour. It is quite a runny batter. If using OXO Good Grips batter dispenser, pour the batter inside it and use to make 4 pancakes.
Slice small mozzarella balls in half and chop the sun-dried tomatoes.
Divide the cheeze and tomatoes in 4, place on top of each pancake and roll them. Put the pancakes in a slightly oiled ceramic dish and bake for about 5 minutes.
Serve hot.



In the last couple of weeks I have been using and testing two new OXO products: OXO Good Grips Batter Dispenser and OXO Good Grips Flip & Fold Omelette Turner.

The batter dispenser is easy to use and clean. It has a valve in the spout which allows you to squeeze as much batter or as little as you need. It also prevents the batter from leaking out. The opening at the top is wide and easy to fill in. There is a base which keeps the dispenser stable. You can also use it as a snap on when the dispenser is turned into a storage for any extra batter. There are measurement markings on the side. Very convenient to fill in the cupcake or muffin cases without dripping the batter all over the place.
The only fault I could find is when there is a small amount of batter left, about 3cm height at the bottom, it is not easy to squeeze it out of the bottle, even using both hands. I end up tipping it over and pouring the remains from the top. Otherwise, it works well, and makes very neat pancakes.
And forgot to mention, it is also BPA free.




The OXO Good Grips Flip & Fold Omelette Turner is a stylish useful kitchen tool. Its shape and size makes omelette-cooking a breeze. As the edge of the turner is soft and flexible, it is suitable for all kinds of pans and frying pans. The handle is comfortable for flipping the pancakes and/or omelettes. It is wide enough for even the bigger crepes to be flipped without tearing. It is heat resistant up to 315C and is safe for non-stick cookware. In the photo below you can see me using it while making pancakes in a medum sized frying pan, but I also used it for making small size blini and bigger crepes as well as omelettes.


Both the batter dispenser and the omelette turner are lovely new additions to the OXO range.

  3. I need to get one of those pancake mix shaker things, so much easier than a hand whisk in the glass bowl that I usually use, it goes everywhere!!
