Mozzarella, fig and prosciutto salad

Summer. What summer, you may ask? where has it gone already? For the last few days it's been raining a lot. Eddie and I got drenched yesterday, walking from school, and our boots were still very wet this morning. I tried to put some scrunched newspapers inside, but it didn't help. Alas, our boiler is on its last legs, and the heating doesn't work. Yet even on a rainy day you might get a window of sunshine and warmth.
In summer we eat lots of salads. There are no rules really in assembling a tasty salad. Just pick and mix ingredients that you fancy.

A few days ago I made this quick and easy salad for lunch.

Mozzarella, fig and prosciutto salad (for 2)
Ingredients:
3 tomatoes, sliced thinly
2 figs, quartered
1 big peach, sliced
about 10 mini mozzarella balls
4 slices of prosciutto
a handful of mixed salad with flowers
Dressing made with olive oil, honey and lemon juice

Slice the tomatoes and season with salt
Assemble the salad by layering the salad leaves first, then the tomatoes, sliced peach and figs, mozzarella and torn prosciutto. Prepare the dressing by whisking olive oil with honey and lemon juice (2tbsp - 1tbsp - 1 tbsp) and drizzle over the salad. Decorating with flowers is optional.
I found the salad mix with flowers in Waitrose, they look very pretty and taste quite nice too.
